How we grade and label

Grading standards differ by commodity, so we publish the one the trade actually uses rather than inventing our own. Cashew is graded by kernel count per pound (W180 to W450), pepper by bulk density in grams per litre, turmeric by curcumin percentage, cardamom by pod size in millimetres. Where a specification is legally required — allergens, sulphite levels, coumarin in cassia — it appears on the product page whether it flatters the product or not.
